At the present time the best rum than becomes in Cuba is the Santiago de Cuba, produced in the city of himself name and the facilities of the old distillery Bacardi, today Rum Santiago, conserving a strict respect by the norms that mark the production of the Cuban light rum. The Rum Santiago 485 Anniversary 20 Years Extra Aged and the 490 Anniversary 25 Years Extra Aged, are two of best rones than they are possible to be found in all the area of the Caribbean, which is equivalent to say that they are of the best thing of the world, although its little publicity does that the drinkers, mainly in the United States, do not know of their existence and they cannot appreciate his certainly spectacular quality. Santiago 25 Years is perhaps the best light rum of the world, with an extraordinary quality that turns it one authenticates art work.
Aside from these two previously mentioned, the marks Caney and Varadero, also produced in the same city, and the Cubay, produced in the Central Rum Distillery in Villa Clara, is a compendium of rum’s of very good quality to very interesting prices that are within reach of whatever it visits the island, or as it is my case, that it resides in Europe, that is where more products of the Cuban industry can be seen. The Caney 10 Years and the Cubay 10 Years are two very good options at the time of buying a very good rum done in Cuba, both are two products of much quality and nevertheless strangers by the public in general are enough, like the Rum Varadero 15 Years, spectacular distilling that is worth the trouble to prove in any case. It is not possible to be spoken of the industry of the rum in Cuba if is not spoken of the Edmundo Dantes 25 Years Special Reserve, I authenticate myth of the Cuban rum, whose purchase is practically impossible unless is also known somebody to that it has left some bottle , its small brother Edmundo Dantes 15 Years, is a rum delight that is worth the trouble to have without a doubt some.

Wow, this is a great post Seamus, some lovely imagery in your writing. I particularly like the discussion of the 'languid pour'. Really in-depth investigation of rum and Cuban bartending. Nice that you are back and alive, I hope you are well wherever you may be.

It's a damned shame that getting Santiago rum outside of Santiago has to be so difficult, I like it much better than Havana Club (which I do like quite a bit too, though). Maybe the people there drink it all before anyone has a chance to export the stuff. They're among the most thirsty people I've ever encountered...

Nice article. I have not been able to drink rum in over 20 years (due to a terrible drinking incident when I was 21) but your writing makes me want to give it a try. Perhaps the aged rum will not make my stomach churn in savage remembrance.

Very much enjoying your blog. Keep up the good work.
